Albert Schmid.  Did you know that burgoo (gumbo of the Bluegrass) rose to prominence in Kentucky thanks to savvy politicians who used the dish to attract voters to debates?  It originated in the military as a safe meal for soldiers.  There are some fabulous recipes found in this book…..Original Whiskey Cake, Boone Tavern Cornsticks, Beaten Biscuits, many barbecue and burgoo recipes.  The only recipe that didn’t make the list for me is Transparent Pie in which my recipe is far better.
